Avocado Mango Salad















Ingredients:
Ripe Avocados - 2
Ripe Mangoes - 1
Hot pickled peppers - a few 

For the dressing:

Lemon juice = 2 tbs
Salt to taste 
Pepper - 1/4 tsp
Olive oil - 1 tbs
Dijon Mustard - 1/2 tsp

Method:  

1. Peel, remove the stone and cut the avocado into cubes.
2. Peel, wash and cut the mango into cubes too.
3. Add coarsely chopped pickled peppers.
4. Prepare the dressing by whisking together all the dressing ingredients. 
5. Sprinkle dressing on the avocado mango pieces.
6. Toss gently with two forks and serve.
